Avocado shake with red chilli Sechuan Cress granité

Cut the red chilli pepper in half lengthwise, remove the seeds and slice into half rings. Bring the water, sugar, chilli pepper, lime and lemon juice to the boil in a pan until the sugar has dissolved. Allow to cool and stir in the Sechuan Cress. 

Pour the mixture into a container and put in the freezer. Whisk occasionally until the mixture is completely frozen. Clean the avocados. Purée the flesh with the lime juice, milk and coconut milk and season with salt and pepper. Pour the shake into glasses and serve with the red chilli Sechuan Cress granité.
